This is one of our staples, it came together one night up at cape york when all our meat was frozen and we had nothing else to eat. I have since added a few fresh ingredients but you can easily keep it to the canned and dried foods for those long trips in the middle ofo nowhere.
500g dried pasta
190g Tuna in oil
1 Can of butter beans (drained and rinsed)
1 small punnet of cherry tomatoes (cut in half)
3 rashers of bacon
80g of baby spinach
Parmesan cheese to taste
2tbs olive oil
Salt and pepper to taste
Boil water and cook pasta as per packet instructions.
In a fry pan saute’ bacon, tomato and spinach until bacon is brown and the tomatoes have start to brake up, about 10 mins. Add butter beans, tuna and oil cook on low for a couple for minutes.
Once pasta is cooked drain and added to the fry pan. Add cheese, salt and pepper mix together take off the heat and serve.
