Beef & Vegetable Stew

This is one of those fabulous ‘one pot wonders’ that you can throw anything in to depending on what you have in the fridge. I have also used potato, carrots, cauliflower and broccoli as that is what I had in the fridge. you could easily add peas, capsicum or onion.

This recipe fed our family of 4. You could add more veg or serve it with some rice or bread.

Ingredients

500g beef cut into cubes

Oil to saute’

A large potato

1 large carrot

Small head of broccoli

½ head of cauliflower

Beef stock powder

Can of crushed tomatos

Water

Beef stock

Dried herbs

Salt and pepper

Equipment

Cast iron camp oven

Camp fire

Method

Brown the meat in the oil. Add the stock powder. salt, pepper and dried herbs. Add  canned tomatoes then fill the can half way with water and add it to the camp oven. Cook for about 30 mins then add the carrot and potato, cook for another 45 mins on a low heat. Add the cauliflower and broccoli and cook for about another 15 mins or until all the veg are cook.
